I don't know if it is because it was good or if it is because I haven't had meat in a month, but damn that tofu was m-f'ing good! I was very intimidated at first and seriously thought I wouldn't be able to swallow tofu. My husband grilled it for me and it was freakin good I am actually craving it today. Here is how I prepared it:
1. Remove tofu from packaging. Place on several sheets of papertowels on a plate and then cover with serveral more papertowels. Put a plate on top and then weight it down with a can. Let sit like this for 15-30 minutes.
2. Cut tofu block into 4 equal peices. Brush with marinade (We used an organic french tomato salad dressing) and sprinkle with seasonings.
3. Grill on medium until there are solid grill lines on all sides.
4. Serve with sidedish or mix in with pasta, rice, etc.
Since I am now aware of the wonders of tofu I think I am going to have a lot easier of a time balancing my diet. Plus, I feel it will enhance my healing capabilities tremendously because we need protein to build and re-build. Today I definately have more energy and was actually able to do some preparations for Christmas!
If you don't like tofu and don't think there is any way you could get on board with it, I have come up with a fool proof trick...deprive yourself of meat and dairy for a full month and you will drool over tofu...it's genius really..
